Artisans mix stone-ground whole-grain durum wheat semolina with cool spring water and a touch of salt, then hand-roll the dough into tight spirals. Slow, low-temperature drying locks in full, nutty flavour and keeps the pasta firm after cooking.

The recipe is simple: 100 % whole-grain wheat and water. By keeping the bran and germ, the flour retains valuable B-vitamins, iron, selenium and natural fibre.
